I bought some Buttered Waffle Cookies from Trader Joe’s the other day. I was going to just break up pieces of waffle cookie into a bowl then put ice cream on top them, but this is so much cooler looking. My husband did in the end break up the pieces of cookie and making more of an ice cream soup out of my pretty dessert. I used the Natural Vanilla ice cream from Breyers and put a mint sprig on top.

Hi! My name is Carrie. I started this blog 11 years ago when I was newly married. We had no kids, only two little furbabies. I loved to cook back then. It was so rewarding to see how I could combine ingredients that I had never tried and make this really wonderful meal. Fast forward 11 years and now I have two boys, 6 and 8 years old.   3. Mmm. Icecream.
    I’ll have to check out those cookies from TJ’s. Seems like they would be a great addition to homemade icecream — maybe broken into pieces and coated with dark chocolate.
