waffles

You know it’s a good night when there are Belgium Waffles for dinner! Marc went to a concert the other night with one of his friends and I made waffles with the puppies. Waffles always come to me at night, never in the mornings. Great waffles come to me at one in the morning… completely sober.

1 ½ cups flour
3 tbsp sugar
1 cup milk
2 eggs, separated
½ cup melted butter
1 tsp vanilla

Mix flour and sugar. Add a little milk and mix well. Combine egg yolks with the remaining milk and mix until smooth. Add melted butter. Beat egg whites until peaks form. Fold gently into batter. Add vanilla and stir. Pour from a cup or pitcher onto hot waffle iron. Bake 5 minutes or until it stops steaming. Remove waffles carefully.

I add powdered sugar to my waffles.

  1. Matt uses yogurt instead of milk and whips it with the eggs for pancakes. They are increadably fluffy!!! I’m sure it would work well for waffles too!
